1 cup butter (softened at room temp.)
½ cup powdered sugar (plus extra for rolling them in after baking)
1 teaspoon vanilla
1 cup chopped nuts (pecans are best in this recipe, but you could also use walnuts)
2 ½ cups flour
Preheat oven to 350. Cream butter and sugar together, add vanilla and nuts. Add flour – mix. Form into balls (about ¾ inch in diameter). Bake at 350 for 12-15 minutes. While still warm, roll in powdered sugar.
